Lobster and Crab Cakes with Remoulade

Ingredients
- 1 large Shallot
- 1 stalk of Celery
- 1 Garlic, minced
- 2 T Olive Oil
- 1 lb Skippers Bay Lobster
- 1/2 lb Crab, picked for shells
- 1/2 cup Dukes Mayonnaise
- 1 1/2 cup Panko, divided
- 1 T Dijon Mustard
- 2 T fresh Tarragon, minced
- 2 T fresh Parsley, minced
- Zest of 1 Lemon
- 1/2 t Salt
- Pepper
- 1/2 cup Oil, for frying
- Remoulade
- 1/2 cup Mayo
- 2 T Ketchup
- 1 T Capers, chopped
- 2 t Dijon
- Juice from 1/2 a Lemon
- 1 tsp Worcestershire
- 1/4 t Garlic Powder
- 1/4 t Kosher Salt
Directions
- Step 1 In a pan on medium heat, sauté the shallot, celery and garlic in olive oil for 5 minutes or until soft.
- Step 2 Save 12 (1-2 inch) sized lobster claws or tail pieces for the top of the cake, optional, and chop the remaining lobster into small pieces.
- Step 3 Combine chopped lobster, crab, sautéed vegetables, mayo, 1/2 cup panko, dijon, fresh herbs, lemon zest, 1/2 tsp salt and 1/2 tsp pepper. Mix until combined.
- Step 4 Portion the crab and lobster mixture into 1/3 cup patty’s and press a lobster claw or chunk into the top.
- Step 5 Place the remaining panko in a bowl and season with a pinch of salt. Gently coat the cakes with the panko and place them on a plate or cookie sheet in the fridge for atleast an hour or overnight.
- Step 6 While the cakes chill, make the remoulade sauce. Mix all ingredients together and season to taste. Keep in the fridge until ready to serve.
- Step 7 In a large non-stick pan, heat up 1/4 c oil on medium heat until a piece of panko sizzles when you sprinkle it in. Pan fry 6 cakes at a time being careful not to over crowd the pan. Fry for about 4 minutes on each side or until golden brown and hot throughout.
- Step 8 Wipe out pan and repeat for the remaining crab and lobster cakes.
- Step 9 Serve with remoulade and enjoy!
Lobster Deviled Eggs

Ingredients
- 6 Eggs
- 4 oz. Skippers Bay Lobster
- 3 T Mayonnaise
- 1 t Dijon Mustard
- 1 T Chives, plus more for garnish
- 2 T Dill Pickle Relish
- 3/4 t Old Bay Seasoning
- 1t Lemon Juice
- Salt and Pepper
Directions
- Step 1 Fill a medium pot filled with 3 inches of water and bring to a boil. Once boiling, carefully place the eggs in the water with a large spoon and let boil for 10 minutes. Remove from heat and run cold water continuously over the eggs for a minute and let sit for 5 minutes. Peel the eggs under running water. Dry the eggs well and cut them in half, placing the egg whites on a plate and the yolks in a medium bowl.
- Step 2 Cut 12 pretty 1 inch lobster pieces to save as the garnish and chop the remaining lobster into bite size pieces.
- Step 3 Place yolks in a bowl and smash with a fork. Add mayo, dijon, chives, lemon juice, dill pickle relish, old bay seasoning and chopped lobster and mix until combined. Season to taste with salt and pepper.
- Step 4 Evenly spoon the filling into the egg whites. Garnish with lobster pieces, chives and black pepper. Serve and enjoy!
Lobster Party Dip

Take your Sunday Funday up a notch with this cheesy dip!
Ingredients
- 6 oz cooked lobster meat (claw, knuckle and body meat)
- 1 t olive oil
- 1 clove garlic (minced)
- ¼ cup chopped shallots
- 1 t horseradish
- 1 t smoked paprika
- 8 oz grated cheddar cheese
- 8 oz cream cheese softened
- ½ cup sour cream
- 2 T grated Romano cheese
- 2 t Dijon mustard
- sea salt and black pepper to taste
- Tortilla chips
Directions
- Step 1 Preheat oven to 375 degrees
- Step 2 Heat a medium skillet to medium-high heat and add the olive oil. Add the shallots and garlic and sauté for 1-2 minutes or until fragrant. Season with sea salt and black pepper to taste.
- Step 3 In a mixing bowl, add the lobster, shallot/garlic mixture, half of the cheddar, the cream cheese, sour cream, Romano cheese, horseradish, mustard and half of the smoked paprika. Mix well.
- Step 4 Add mixture into an oven-safe baking dish, spreading mixture evenly.
- Step 5 Add remaining cheddar cheese and smoked paprika.
- Step 6 Bake for 20-25 minutes or until cheese is golden and bubbly.
Lobster-cargot

Like escargot. But better.
Ingredients
- 8 T butter
- 2 cloves of garlic (minced)
- 1/2 lemon (juiced)
- 4 T parsley (roughly chopped)
- 3 oz of lobster meat (roughly chopped)
- 1 t of red pepper flakes
- 1/4 cup of shredded gruyere cheese
- 1 baguette
Directions
- Step 1 Turn broiler on.
- Step 2 In a skillet over medium heat add stick of butter. Once melted add garlic and red pepper flakes and cook until fragrant – about 1 min. Add lobster meat, lemon juice and parsley. Toss until lobster meat is well coated.
- Step 3 Remove skillet from heat and fill each escargot pan hole/well with a chunk of lobster meat mixture. You should have a decent amount of melted butter left so pour that over the top of all the lobster filled holes so each lobster well is full of buttery goodness.
- Step 4 Top escargot pan with gruyere cheese and put escargot pan under broiler for 3-5 minutes or until the cheese is bubbling and has some good color.
- Step 5 Serve immediately with a crusty baguette.
